Rhubarb!

With the super hot summer days already happening through much of May and into June, I’m harvesting some extra rhubarb and freezing it just in case the season ends abruptly due to heat.  Despite my lack of ability to estimate almost everything, I’m getting really good at picking almost exactly 1kg of rhubarb (1l bottle for scale).  I’m stocking up to be prepared for the first jams of the season.  Rhubarb/Strawberry which is a more tart, more rhubarb version of the standard Strawberry/Rhubarb.  Both are delicious but the more rhubarb version is definitely a family favorite.

We aren’t growing our own strawberries yet and we likely never will for sale, but once we have pool greenhouse construction complete we will be able to surround it with our perennial beds and hopefully grow enough strawberries for jam production, asparagus because it’s amazing, and relocate some of the rhubarb to a more convenient area.  So many projects, so many long timelines, but a little more each day.
